The New York Knicks have now missed on about every unrestricted free agent big man there was when NBA free agency opened.
They could be turning their focus to restricted free agents now, and OKC Thunder center Enes Kanter is easily the best one that can be realistically signed away from his current team. According to Frank Isola of the New York Daily News, Kanter is now on the Knicks' radar:

However, the Thunder have made Kanter a priority this offseason as they look to re-sign their best big man.

Kanter, who is just 23 years old, averaged 18.7 points and 11 rebounds in 26 games with OKC last season. Whatever happens, Kanter looks like he'll become the latest former Kentucky Wildcat to get a big NBA contract.
